Convection and combi: the moving parts bite first
A convection oven earns its keep with the fan, so the fan is where it hurts. Listen at the door: a healthy fan is a steady hum, and grinding, squealing, or silence are all versions of the same phone call. Combi ovens add steam, and in Central Florida that means scale.
