You bake a tray of cookies for the kids in your Winter Park kitchen, set the oven to 350, wait for the beep, and pull them out twenty minutes later burned black on the bottom and still raw and pale on top. Or the birthday cake comes out sunk in the middle, gummy, never set, even though the display swears the oven hit 350 the whole time. The oven heats. It just is not holding the number it shows you.
This is a different problem from an oven that will not heat at all. A dead oven is cold, full stop, and that is usually a burned-out element or a weak igniter that never lights. What we are talking about here is an oven that does heat but runs hot, runs cold, or browns unevenly from rack to rack. The fix is almost never the same part. Here is what is actually off.

A failing oven temperature sensor is the most common cause
Most ovens built in the last twenty years use an RTD sensor, a thin metal probe in the back wall that tells the control board the real temperature. When that probe drifts, it reads wrong. The board thinks the oven is at 350 when it is really at 300, or it shuts the heat off early at 380. Either way your food cooks at the wrong temperature.
The tell is that the oven heats fine but the results are off in one direction every time. Always undercooked, or always scorched. A bad sensor is a clean part to test with a meter and usually a quick swap. The sensor itself runs about $20 to $40 at retail, and it is one of the cheaper oven parts to replace.

A weak or burned bake or broil element bakes things unevenly
On an electric oven, the bake element at the bottom does most of the cooking. When it starts to fail, it does not always die clean. Part of it still glows and part of it stays dark, so one side of the oven runs hotter than the other. You get cookies brown on the left and pale on the right, or a cake that rises lopsided.
Pull the racks and look at the element with the oven set to bake. A healthy one glows bright orange the whole length. If you see a dark stretch, a blister, or a crack, that element is on its way out. Bake and broil elements are cheap, roughly $20 to $60 at retail, and they are one of the more straightforward oven parts.
A weak gas igniter makes a gas oven run low and slow
On a gas oven, the igniter has two jobs. It glows to light the burner, and it has to draw enough current to fully open the gas safety valve. When the igniter weakens with age, it still glows orange, so it looks fine, but it no longer gets hot enough to open the valve all the way. The result is a gas oven that runs low and slow and never holds the set temperature.
If your gas oven takes forever to preheat, cooks long and weak, or you watch the igniter glow for minutes before a small flame catches, the igniter is the likely answer. This is a glow-bar part and a common one to replace. Do not ignore a strong gas smell, though. If you smell gas, shut the supply off and call.
A bad convection fan or convection element throws off even baking
If your oven has convection, a fan in the back wall moves hot air around so everything browns evenly. Many convection ovens also have a third heating element wrapped around that fan. When the fan motor seizes or the convection element burns out, the air stops circulating, and the even bake you paid for turns into hot spots and cold spots.
You can hear this one. A convection oven should run with a soft, steady fan hum. If the fan is silent, grinding, or only spins sometimes, the motor is failing. If convection mode browns no better than regular bake, the convection element may be dead. Both take a meter to confirm and parts to fix.
A door that will not seal lets your heat escape
An oven holds temperature only if it stays sealed. The rubber or fiberglass gasket around the door, and the two hinges that hold the door square, do that work. When the gasket gets brittle and torn, or a hinge sags so the door no longer closes flush, hot air leaks out the top. The oven keeps firing to catch up, runs uneven, and never settles at the set number.
Check it cold. Run your hand around the gasket for tears or flat, crushed spots, and look at whether the door sits square and snug against the frame. A door that you can wiggle at the top corner, or that has a visible gap, is leaking heat. A new gasket is an inexpensive part. A sagging hinge is a bit more involved.
Sometimes the oven just needs to be recalibrated
Plenty of ovens that bake hot or cold are not broken at all. They have simply drifted out of calibration over years of use, and the offset needs a reset. Most modern ovens let you dial in a calibration offset right from the control panel, usually plus or minus 35 degrees, which is enough to correct a normal drift without any parts.
The catch is that you have to know the real temperature first before you adjust anything. Calibrate to a guess and you make it worse. So before you decide a part is bad, do the cheap checks below. A lot of complaints we get about uneven baking turn out to be a 25-degree drift that a calibration fixes for free.
Simple checks you can do before calling anyone
None of these need tools beyond a $10 thermometer. Run through them first.
- Test the real temperature. Hang a separate oven thermometer on the middle rack, set the oven to 350, and let it fully preheat plus another ten minutes so it cycles. Read the thermometer. If it sits at 325 or 375, you have proof of how far off the oven is and which direction.
- Check the door gasket and hinges. With the oven cold, feel around the door seal for tears, gaps, or crushed flat spots, and make sure the door closes square and snug. A door that wiggles at the top or shows daylight at a corner is leaking heat and pulling your temperature off.
- Recalibrate to the owner manual. Once you know the real temperature from the thermometer, use your oven's calibration setting to enter an offset. If the thermometer read 25 degrees low, bump it up 25. Look up the exact steps in your manual, since the button combo is different on every brand.
- Look at the bake element. On an electric oven, set it to bake and watch the bottom element. It should glow bright and even end to end. A dark patch, a blister, or a crack means it is failing and browning unevenly.
One Florida warning worth its own line. Running the self-clean cycle is the fastest way to turn an uneven oven into a dead one. Self-clean drives the cavity past 800 degrees, and that heat regularly blows the oven's thermal fuse or cooks the bake element or the control board.
